Dark Chocolate Superfood Bites

I, like so many, have a wicked sweet tooth. And my absolute weakness is dark chocolate. It’s not overly sweet, yet it’s rich. I love it in all forms, but particularly love when it shines on its own. Just as it does in these Dark Chocolate Superfood Bites!

Dark chocolate is melted, poured in mounds on a parchment-lined baking sheet, topped with nutrient-dense toppings, and refrigerated until solid. I love keeping these in the fridge for a quick treat. Find out how to make them by reading on!

What Does "Superfood" Even Mean?

The term superfood defines ingredients that are particularly nutrient-dense. According to an article written for Harvard University, a food is considered a superfood, “when it offers high levels of desirable nutrients, is linked to the prevention of a disease, or is believed to offer several simultaneous health benefits beyond its nutritional value.”

While some of the ingredients used here, such as goji berries and hemp seeds, may not be s familiar to you, many superfoods are those that you may even already have in your refrigerator:

  • Beans
  • Berries
  • Spinach
  • Cauliflower
  • Salmon

How To Make Dark Chocolate Superfood Bites

These little bites couldn’t be simpler to make! Here’s what you’ll do:

  • Add chocolate chips to a microwave-safe glass bowl.
  • Heat in 30-second increments, stirring in between heating. The chocolate will melt as you stir, so you should only need to heat the chocolate for 1:30-2:00.
  • Use a tablespoon to divide the mixture onto a wax or parchment paper lined baking sheet or plate. Spread the chocolate slightly to create small “wafers”.
  • Top each wafer with your toppings. Place in the refrigerator for at least 1 hour for them to harden. Enjoy immediately or store in a lidded container for up to one week.

Ways To Make These Treats Your Own

These little morsels are entirely customizable! Any ingredient you can put in a cookie would be excellent in this recipe. Here are a few flavor combinations that would be delicious!

  • Chopped Walnuts + Orange Zest + Hemp Seeds
  • Sliced Almonds + Shredded Coconut
  • Crushed Pistachios + Dried Apricots + Ground Cinnamon
  • Dollop of Almond Butter + Freeze Dried Strawberries
