- 16 oz whole mushrooms
- 1/2 cup butter
- 1/2 cup yellow onion, chopped finely
- 1/2 tsp salt
- 5 Tbsp parlsey, chopped
- 4 cloves garlic, minced
- 1/4 cup parmesan cheese
- 1 1/4 cup panko bread crumbs
Preheat oven to 400 degrees.
Using a damp paper towel, gently clean mushrooms, removing dirt. Remove stems, and arrange mushroom caps cavity-side up in baking dish or pie plate. Mince stems, set aside.
In a large saute pan, melt butter and add minced stems, chopped onion, and salt. Saute until fragrant, about 5 minutes.
Add parsely, garlic, and parmesan cheese. Saute until cheese has melted.
Add panko, stirring util combined. Remove from heat and allow to slightly cool.
Use a spoon to stuff each mushroom cap with the mixture. Bake for 20 minutes. Broil on high for 2 minutes, or until top is lightly browned (you may be able to skip this step if your mushrooms were browned enough after baking for 20 minutes).
Garnish with additional chopped parlsey and serve warm.
