The Best Stuffed Mushrooms

These Stuffed Mushrooms are simple and absolutely delicious! The mushrooms stems are chopped and sautéed with garlic, herbs, and breadcrumbs for a savory stuffing.

Ingredients

  • 16 oz whole mushrooms
  • 1/2 cup butter
  • 1/2 cup yellow onion, chopped finely
  • 1/2 tsp salt
  • 5 Tbsp parlsey, chopped
  • 4 cloves garlic, minced
  • 1/4 cup parmesan cheese
  • 1 1/4 cup panko bread crumbs

Instructions

  • Preheat oven to 400 degrees.
  • Using a damp paper towel, gently clean mushrooms, removing dirt. Remove stems, and arrange mushroom caps cavity-side up in baking dish or pie plate. Mince stems, set aside.
  • In a large saute pan, melt butter and add minced stems, chopped onion, and salt. Saute until fragrant, about 5 minutes.
  • Add parsely, garlic, and parmesan cheese. Saute until cheese has melted.
  • Add panko, stirring util combined. Remove from heat and allow to slightly cool.
  • Use a spoon to stuff each mushroom cap with the mixture. Bake for 20 minutes. Broil on high for 2 minutes, or until top is lightly browned (you may be able to skip this step if your mushrooms were browned enough after baking for 20 minutes).
  • Garnish with additional chopped parlsey and serve warm.
