Eggs In Purgatory

- 1 Tbsp olive oil
- 4 cloves garlic, finely minced
- 1/4 cup yellow onion, finely minced
- 1 Tbsp tomato paste
- 28 oz can crushed tomatoes
- 1 Tbsp red pepper flakes, divided
- 1 cup cherry tomatoes
- 4 eggs
- Sliced baguette, for serving
Add olive oil to a cast iron skillet set over medium heat.
Add minced garlic and onion, sauteeing until fragrant, about 2 minutes.
Add tomato paste and stir to combine. Add crushed tomatoes, cherry tomatoes, and 2 teaspoons of red pepper flakes (more or else, based on how spicy you like things!). Allow to gently simmer for 15 minutes, stirring sporadically.
Crack 1 egg at a time into a small dish. Gently slide eggs into tomato sauce. Allow to continue cooking about 5 minutes, until whites are set but yolks are still runny.
As the eggs cook, toast baguette slices for serving.
Serve with warm baguette slices, additional red pepper flakes, and pepper.
