- 8 cobs corn, shucked
- 1 red bell pepper, chopped
- 1/3 cup red onion chopped
- 1/2 cup cilantro, chopped
- 2 limes, juiced
- 1 jalapeno, minced
- 1 tsp cumin
- 1 tsp salt
Place corn cobs in a pot of simmering water for 5 minutes. As the corn cooks, chop the remaining ingredients.
Once the corn has cooked and it's cooled, place a small ramekin or bowl inverted into a large bowl. Place one corn cob on the flat top of the ramekin, and using your knife, cut the kernels from the cob. Doing this keeps the corn contained in one place as opposed to landing all over your counter!
Add the remaining ingredients with the corn and toss to combine. Serve with tortilla chips!
