Everything Bagels

These homemade Everything Bagels are absolutely incredible! Leavened dough is gently boiled and baked to perfection. Perfect slathered with cream cheese!

Ingredients

  • 1 1/2 cups water (100 to 110 degrees)
  • 2 1/4 tsp dry yeast (one small package)
  • 1 Tbs sugar
  • 4 1/4 cups bread flour, divided
  • 2 tsp salt
  • Cooking spray
  • Cornmeal
  • 1 egg, lightly whisked with 1 tablespoon water
  • 1/3 cup Everything Seasoning, or a mixture of poppy seeds, sesame seeds, sea salt, dried onion

Instructions

  • Pour water into a large bowl and add yeast and sugar. Stir gently to combine and allow to stand for about 5 minutes, until lightly frothy and fragrant.
  • Add 4 cups of flour and salt to the liquid mixture, stirring to combine. If mixture appears wet, add remaining 1/4 cup of flour. Once a loose dough has formed, pour on to a lightly floured surface and knead until smooth and combined. Use additional flour if dough is too sticky.
  • Spray a large bowl with cooking spray and add dough to the bowl. Cover with a kitchen towel and place in a warm spot in your kitchen until the dough doubles in size. Depending on the temperature of your home, this can take anywhere between 1- 1 1/2 hours.
  • Punch dough down and allow to rest for 5 minutes. Turn dough out on a lightly floured surface and divide into 10 pieces. Roll each ball in between your hands and use your fingers to make a hole in the center of each dough ball. Gently stretch and form the dough, placing bagels on a baking sheet sprayed with cooking spray. Cover with a towel and set aside for 10 minutes. The bagels will sightly rise.
  • Meanwhile, prepare to boil the bagels. Fill a large stockpot with water and set over medium high heat. Cover another baking sheet with about 1/4 cup corn meal - you want enough to cover the pan loosely, as this will prevent sticking when the bagels bake. Preheat oven to 400 degrees. Once the water is gently simmering, you're ready!
  • Gently lower 3 bagels into the simmering water, cooking gently for about 1 minute, turning once throughout cooking. Transfer boiled bagels to a cooling rack sprayed with cooking spray (this helps avoid sticking!) as you complete the remaining bagels. Once all bagels are boiled, brush each one with the egg wash and sprinkle with the everything seasoning. Transfer to the cornmeal covered baking sheet.
  • Bake for about 20 minutes, monitoring to ensure they don't brown too quickly (everyone's ovens are different!). Remove from oven and cool on a cooling rack. Slice, toast, and serve with cream cheese!
