Peach Sun Tea

This Peach Sun Tea is the quintessential summer step! Teabags are steeped in the heat of the sun, yielding a light and refreshing beverage. Peach simple syrup adds sweetness and delicate flavor!

Ingredients

  • 2 gallons water
  • 16 black tea bags, string and tag removed, keeping bag intact

For the peach simple syrup:

  • 1 1/2 cups sugar
  • 2 cups water
  • 2-3 large peaches, pits removed and roughly chopped

To Serve:

  • Fresh mint

Instructions

  • Fill large beverage dispenser with 2 gallons of water. If your vessel is smaller, simply adjust the amount of tea bags you add to the water.
  • Add tea bags to water and cover. Allow tea to sit in the sun for at least 2 hours, which will allow the tea to steep and the flavors to release. Sample to determine if more time is needed for the tea to steep. Once ready, remove the tea bags from the container.

For the peach simple syrup:

  • As the tea steeps, prepare the peach simple syrup. Combine sugar and water in a medium saucepan set over medium heat. Swirl the pan every so often until the sugar dissolves. Remove from heat.
  • Add roughly chopped peaches. They don't need to be finely chopped: they will simply infuse the syrup and then be discarded (or else they would be delicious spooned over ice cream!). Allow the syrup to steep, covering and allowing it to cool at room temperature.
  • When tea is ready, strain peaches from simple syrup and pour liquid into tea. Stir to combine, add ice, and serve! Fresh mint and peach slices are perfect garnishes!
