Spicy and Creamy Sweet Corn Flatbread

This Spicy and Creamy Sweet Corn Flatbread is absolutely delicious. Creamy cheese, bursting sweet corn, and hot jalapeños.

Ingredients

  • 1 naan flatbread, storebought (substitute for your favorite pizza dough if you like! My homemade version is linked in the recipe notes)

For the ricotta mixture:

  • 1/2 cup ricotta cheese
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1 clove garlic, passed through a microplane

To top the pizza:

  • 1/2 cup fresh mozarella cheese, shredded (I recommend purchasing the ball of fresh mozzarella and shredding yourself. The flavor is so much better!)
  • 3-4 slices fresh mozarella cheese (Purchase the pre sliced for ease!)
  • 1 cup fresh corn, cooked
  • 1 jalapeno, sliced
  • 1/4 cup red onion, thinly sliced

For the spicy honey:

  • 1 jalapeno, sliced
  • 2 Tbsp honey
  • 1/2-1 tsp apple cider vinegar

Instructions

  • Preheat grill over medium-high heat. 
  • Combine ricotta cheese, olive oil, salt, and garlic in a small bowl. Stir to combine. 
  • Add naan to grill, allowing to warm through. Remove from grill and spread with ricotta mixture. Top with mozzarella cheese, sweet corn, sliced jalapeños, and red onion. 
  • Return to grill and cook until cheese has melted and ingredients are warmed through, about 5 minutes.
  • Meanwhile, make the spicy honey. Combine jalapeño, honey, and apple cider vinegar in a small jar. Shake to combine. 
  • Once pizza is done, remove from grill to a serving platter or board. Drizzle with spicy honey, slice, and enjoy!
