Tiramisu for Two

This eggless Tiramisu for Two is the perfect recipe to make for date night in! Layers of espresso, lady finger cookies, and mascarpone cheese make up this classic dessert.

Ingredients

  • Lady finger cookies (amount will vary based on the vessel you use!)
  • 4 oz mascarpone cheese
  • 1 Tbsp dark rum
  • 2 Tbsp sugar
  • 1/3 cup heavy whipping cream
  • 1/2 tsp vanilla extract
  • 1/2 cup very hot water
  • 1 Tbsp instant espresso powder
  • 1-2 Tbsp cocoa pwoder

Instructions

  • Start by making the espresso mixture: add espresso powder to 1/2 cup very hot water. Stir to combine and set aside as you prepare the other ingredients.
  • Add heavy cream and vanilla to a medium bowl. Use a hand mixer to whip the cream until soft peaks form.
  • Add mascarpone cheese, rum, and sugar to a separate medium bowl. Use your hand mixer to combine this mixture. Fold whipped cream into the mascarpone gently. Set aside.
  • Break lady finger cookies up to fit inside the glass dishes you will serve your tiramisu in. Do one layer of biscotti on the bottom of each dish. Using a pastry brush, brush each biscotti cookie with the espresso mixture.
  • Top with a couple of spoonfuls of the mascarpone mixture. Continue this process: brush lady fingers with espresso, and top with mascarpone mixture until all ingredients are gone.
  • Dust each tiramisu with cocoa powder. Refrigerate for at least 1 hour and up to 24 hours in advance.
