Cinnamon Raisin Cookie Energy Bites

These Cinnamon Raisin Cookie Energy Bites are the perfect on the go snack! Rolled oats, cinnamon, raisins, and flax meal, and cashew butter make up these delicious bites.

Ingredients

  • 1 1/2 cups oats
  • 1 cup cashew butter
  • 1/4 cup pure maple syrup
  • 2 tsp cinnamon
  • 2 Tbsp raisins
  • 50 grams flax meal

Instructions

  • Combine all the ingredients except the raisins in a large bowl.
  • Use spatula to combine everything completely. If the mixture appears too dry, add a small amount of maple syrup and continue stirring. Fold in the raisins.
  • Using a cookie scoop or spoon, scoop mixture in to uniformly sized balls. Squeeze the mixture in your hands (using disposable gloves makes this process less messy!), and roll into balls.
  • Place on a parchment or wax paper lined plate or baking sheet, and refrigerate for at least an hour, or until solid.
  • Transfer energy bites to a covered container. Energy bites will last in the refrigerator for up to 2 weeks (if you don't devour them faster!).
