Ingredients

  • 2 sheets puff pastry, thawed
  • 1 cup leftover sweet potatoes
  • 1 1/2 cups leftover stuffing
  • 1 1/2 cups leftover turkey, chopped
  • 3/4 cup cranberry sauce
  • 1 1/2 cups shredded Havarti cheese, or other creamy and melty cheese
  • 1 egg, whisked
  • 1 Tbsp everything bagel seasoning

Instructions

  • Preheat oven to 350 degrees.
  • Place one sheet of phyllo on a sheet of parchment paper on a cutting board. Use a pastry cutter or pizza wheel to slice the phyllo into 9 squares.
  • Working with one piece of phyllo at a time, use a rolling pin to gently roll it out. Layer the sweet potatoes, stuffing, turkey, and cranberry sauce (in very small amounts!) on to the phyllo. Top with shredded cheese.
  • Using a pastry brush, brush the edges of the phyllo square with egg wash. Fold the phyllo over the filling, forming a triangle. Gently press the edges and use a fork to seal them. Place on a parchment lined baking sheet.
  • Brush each turnover with egg wash and sprinkle with everything bagel seasoning. Bake for 20 minutes or until golden brown. Serve warm!
