Gingery Carrot & Mango Smoothie

This Gingery Carrot & Mango Smoothie is an energizing way to start your day! Packed with nutrients and plenty of flavor to match, this smoothie recipe is one you'll make on repeat!

Servings: 1 smoothie

Ingredients

  • 1 medium carrot, peeled and sliced in coins
  • 1/2 inch piece fresh ginger, peeled and grated
  • 1/2 cup frozen mango
  • 1/2 banana, sliced and frozen (see note)
  • 1/2 cup coconut water
  • 1/4 tsp turmeric powder

Instructions

  • In a small saucepan, add about 1/2 cup water. Add peeled and sliced carrot, allow to steam for 5-10 minutes util fork tender.
  • Meanwhile, prepare other ingredients. Add everything to your blender, and blend until completely smooth. Adjust amount of liquid if you prefer your smoothies thinner.
  • Insert straw, and enjoy!

Notes

Smoothie Tips
  • I always have frozen banana coins on hand for smoothies - they add a creamy texture that can't be beat.
    • When a banana is about to get a little TOO ripe, I'll peel and slice it, arrange on a small cookie sheet or plate, and freeze until 75% solid. I'll then transfer them to a container for ready access!
  • Feel free to add your favorite protein powder or supplement to your smoothie! I'm partial to a collagen based protein powder to get an extra boost.
