White Chocolate Pistachio Crispy Treats

These White Chocolate Pistachio Crispy Treats are crunchy, crispy, and addictive! The classic dessert gets a modern twist: the crisped rice treat comes together with brown rice syrup and coconut oil, Maning less preservatives from those mallows. Ingredients

  • 2/3 cup brown rice syrup
  • 1/4 cup Coconut Oil
  • 1 tsp vanilla
  • 4 cups crisped rice cereal
  • 12 oz white chocolate
  • 1/2 tsp pistachio extract
  • 1/3 cup pistachios, crushed

Instructions

  • In a small saucepan set over low heat, combine brown rice syrup and coconut oil. Allow to come to a boi, stirring thoroughly to combine. Remove from heat and add vanilla.
  • Pour mixture in to large bowl filled with crippled rice cereal. Stir completely to combine.
  • In a parchment lined 9 inch baking pan, pour crisped rice mixture. Using another pice of parchment paper (or well oiled fingers!) firmly press mixture in to pan, pressing firmly to compact.
  • Set aside and allow to cool. Add 12 ounces of baking chocolate to a microwave safe dish. In 30 second increments, gently warm chocolate, stirring after each 30 second interval. Be careful to not overcook - it's better to microwave in shorter increments, and stir more, as opposed to cooking too long.
  • Pour over crisped rice, smoothing with a spatula. Top with crushed pistachios. Cool bars in freezer or refrigerator until chocolate is set.
  • Slice carefully and serve.
