- 1 cup oats
- 2 cups spinach,
- 1 1/2 cups cherry tomatoes
- 1/2 cup cooked turkey sausage
- 2 garlic cloves minced
- Salt and pepper
- Parmesan cheese to serve
- 2 eggs
Preheat oven to 400 degrees. Add cherry tomatoes to a baking sheet, toss with a drizzle of olive oil, one clove minced garlic, and salt and pepper. Roast until tomatoes burst, about 20 minutes.
Add 2 cups of water to medium saucepan, and add a pinch of salt. Bring to simmer. Add oats and stir to combine. Cover and allow to cook for 15 minutes. Watch closely so as to not overcook!
Meanwhile, heat a medium pan over medium heat. Add turkey sausage, using wooden spoon to break up. Allow to cook as you prepare the spinach.
Add a drizzle of olive oil to sauté pan. Add remaining clove of minced garlic, sauté for 1 minute until fragrant. Add spinach, allowing to wilt.
Prepare eggs to desired liking - try sunny side up!
Once oats are finished cooking, top with roasted tomatoes, sautéed spinach, and turkey sausage. Top with egg, fresh cracked pepper, and parmesan.
