Grilled Zucchini Caesar is a delicious modern twist on the classic salad! Zucchini is grilled and topped with the usual Caesar ingredients: finely shredded romaine lettuce, toasty breadcrumbs, and a salty, creamy dressing. Ingredients

For the grilled zucchini:

  • 2-3 small zucchini quartered lengthwise
  • olive oil
  • Salt and pepper

For the Caesar Dressing:

  • 1/4 cup Greek yogurt
  • 1/4 cup freshly grated parmesan cheese
  • 2 Tbsp milk
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 2 tsp anchovy paste
  • 2 tsp Worcestershire sauce
  • 1 clove garlic minced
  • 1 Tsp dijon mustard
  • Salt and pepper

To serve:

  • 1/4 cup bread crumbs
  • 1/2 romaine lettuce finely chopped
  • Freshly cracked pepper
  • freshly grated parmesan cheese for serving

Instructions

For the grilled zucchini:

  • Set a grill pan over medium heat. Drizzle quartered zucchini with olive oil and sprinkle with salt and pepper. Grill zucchini spears in batches, until slightly charred.

For the Caesar Dressing:

  • Whisk all ingredients in a small bowl until thoroughly combined. Taste, adjust anchor paste, salt and pepper, and lemon juice.

To serve:

  • Place grilled zucchini on a platter. Drizzle with Caesar Dressing. Top with finely shredded romaine lettuce, freshly cracked pepper, and extra parmesan cheese.
