Summer Tomato Sandwich

The Summer Tomato Sandwich is by far one of my favorite summer recipes! This simple, healthy, open faced tomato sandwich is a delicious snack, appetizer, or mid-day meal.

Ingredients

  • 2 slices whole grain bread
  • 1 Tbsp Vegan Mayonnaise
  • 2 small Tomatoes, (or 1 large)
  • Maldon or large flake salt
  • Freshly cracked black pepper
  • Basil for serving, optional

Instructions

  • Slice tomatoes, season liberally with large flake sea salt (do this at least 10 minutes prior to using tomatoes. This allows them to get extra juicy and flavorful).
  • Meanwhile, toast bread lightly. Spread with vegan mayonnaise.
  • Top with tomatoes, fresh cracked black pepper, and basil if desired.
