Summer Tomato Sandwich
The Summer Tomato Sandwich is by far one of my favorite summer recipes! This simple, healthy, open faced tomato sandwich is a delicious snack, appetizer, or mid-day meal.

- 2 slices whole grain bread
- 1 Tbsp Vegan Mayonnaise
- 2 small Tomatoes, (or 1 large)
- Maldon or large flake salt
- Freshly cracked black pepper
- Basil for serving, optional
Slice tomatoes, season liberally with large flake sea salt (do this at least 10 minutes prior to using tomatoes. This allows them to get extra juicy and flavorful).
Meanwhile, toast bread lightly. Spread with vegan mayonnaise.
Top with tomatoes, fresh cracked black pepper, and basil if desired.
