Mashed Cauliflower with Roasted Garlic Butter
This Mashed Cauliflower with Roasted Garlic Butter & Thyme is the perfect Thanksgiving side dish! It’s thick and creamy, while being lighter than the standard mashed potato. You and your guests won’t know the difference!

Servings: 4 servings
- 1 head Cauliflower
- 1/4 cup unsalted butter, room temperature
- 4 cloves roasted garlic
- 1 Tbsp fresh thyme
- 1 tsp salt
- 1/2 tsp Freshly cracked pepper
Add a small amount of water (no more than 1 cup) to a large stockpot.
Add cut up cauliflower in a steamer basket set over the water. Steam until cauliflower is fork tender, about 15 minutes. Allow to slightly cool.
Transfer cooled cauliflower to a food processor or blender, and blend until smooth.
In a small bowl, mix butter and garlic together. Stir all but 1 tablespoon in to mashed cauliflower, allowing to melt. Add salt and thyme.
Transfer to serving bowl, top with reserved butter, and garnish with sprigs of thyme.
