- 1/2 tsp fresh thyme
- 2 cups cherries, stemmed and pitted

Pit the cherries. If you can afford it, a cherry pitter is an amazing investment! They also serve dual purpose for olives! If not, use the side of a knife to smash each cherry, picking the pit out.
Add cherries to medium bowl, drizzling with 1 Tablespoon of olive oil. Season with salt and pepper.
Heat grill to medium-high heat. Add cherries to a griller basket, adding it to the grill. Grill for about 10 minutes, until cherries are softened and fragrant.
Remove cherries from grill, adding back to bowl. Add fresh thyme, tossing to combine. Set aside to cool slightly as you prep the baguette.
For the bruschetta:
Slice baguette on a bias. Brush each case with remaining olive oil, season with salt and pepper.
Grill for 1 minute per side - you just want the bread lightly toasted.
Arrange baguette, tangy ricotta, and smoked cherries on a platter to serve.
