Lightened Up Broccoli Salad

The classic potluck staple salad gets lightened up! Still with the same addictive smoky, sweet, and tart crunch from broccoli, raisins, bacon, and a greek yogurt creamy dressing.

Ingredients

For the broccoli salad:

  • 2 heads broccoli
  • 1 cup red onion chopped
  • 8 strips cooked bacon, chopped
  • 1 cup raisins

For the dressing:

  • 1 cup Greek yogurt
  • 1 1/2 Tbsp mayonnaise
  • 2 Tbsp apple cider vinegar

Instructions

  • Chop broccoli in to bit sized pieces. Place in large bowl
  • Add chopped onion, chopped cooked bacon, and raisins.

For the dressing:

  • Add yogurt, mayonnaise, and apple cider vinegar to a mason jar. Stir or shake to combine.
  • Pour dressing over salad. Toss to thoroughly coat.
  • Flavors develop when the salad sits in the fridge! Great when prepared in advance, but arguably equally as delicious if eaten right away!
