- 12 oz soba noodles
- 2 Tbsp Aminos (or other soy alternative)
- 1 Tbsp fresh ginger, peeled and grated
- 2 tsp sesame oil
- 1 Tbsp rice vinegar
- 1 cup Cucumber, thinly sliced
- 4 green onions,
- Sesame seeds,
Cook soba noodles according to package instructions.
Meanwhile, combing aminos, ginger, sesame oil, and rice vinegar in a mason jar. Screw on lid, and shake dressing to combine.
Add slightly cooled noddles, dressing, sliced cucumber, and chopped green onion in a medium bowl, tossing to combine.
Garnish with sesame seeds and additional green onions.
