Ingredients

  • 12 oz soba noodles
  • 2 Tbsp Aminos (or other soy alternative)
  • 1 Tbsp fresh ginger, peeled and grated
  • 2 tsp sesame oil
  • 1 Tbsp rice vinegar
  • 1 cup Cucumber, thinly sliced
  • 4 green onions,
  • Sesame seeds,

Instructions

  • Cook soba noodles according to package instructions.
  • Meanwhile, combing aminos, ginger, sesame oil, and rice vinegar in a mason jar. Screw on lid, and shake dressing to combine.
  • Add slightly cooled noddles, dressing, sliced cucumber, and chopped green onion in a medium bowl, tossing to combine.
  • Garnish with sesame seeds and additional green onions.
