2 Ingredient Banana Pancakes make a delicious and nutritious weekend (or weekday!) breakfast. Feel free to throw in whatever pancake mix-in's you like, or top with your favorite fruit, maple syrup, or nut butter.

Ingredients

  • 1 banana, very ripe preferred
  • 2 eggs

Instructions

  • Heat an 8 inch non-stick skillet over high heat. Spray with coconut oil.
  • In a medium bowl, mash the banana.
  • In separate bowl, whisk eggs until frothy.
  • Pour eggs over banana, mix thoroughly to combine.
  • Pour mixture in to hot skillet, allow to cook for 5 minutes.
  • Turn heat down, and continue to monitor. Flip when pancake is cooked through on bottom half.
  • Cook until both sides of pancake are a caramelized brown.
  • Top with favorite fruit, maple syrup, apple sauce, nut butter, or simple enjoy on its own!
