2 Ingredient Banana Pancakes make a delicious and nutritious weekend (or weekday!) breakfast. Feel free to throw in whatever pancake mix-in's you like, or top with your favorite fruit, maple syrup, or nut butter.

- 1 banana, very ripe preferred
- 2 eggs
Heat an 8 inch non-stick skillet over high heat. Spray with coconut oil.
In a medium bowl, mash the banana.
In separate bowl, whisk eggs until frothy.
Pour eggs over banana, mix thoroughly to combine.
Pour mixture in to hot skillet, allow to cook for 5 minutes.
Turn heat down, and continue to monitor. Flip when pancake is cooked through on bottom half.
Cook until both sides of pancake are a caramelized brown.
Top with favorite fruit, maple syrup, apple sauce, nut butter, or simple enjoy on its own!
