Texas Caviar

This Texas Caviar is a classic! You may call it something different, but we're all on the same page: fresh peppers, cilantro, and lime juice are mixed with black eyed peas or other bean to create an absolutely addictive dip. Great on burgers, eggs, salads, in wraps, and of course - as a chip dip! This simple and healthy recipe is one you'll make again and again!

Ingredients

  • 1 each red, yellow, and green pepper, diced
  • 5 Tomatoes, seeded and chopped
  • 6 green onions, chopped
  • 1 cup cilantro chopped
  • 2-5 jalapenos, (see note)
  • 4-5 garlic cloves minced
  • 2 16 oz can black eyed peas
  • 1 16 oz can corn, no salt added
  • 1 Tbsp chili powder
  • 1 Tbsp cumin
  • 1 Tbsp Garlic Powder
  • 1/4 cup red wine vinegar

Instructions

  • Chop the peppers, tomatoes, and green onion in to bite sized pieces. Place in large bowl.
  • Finely mine the garlic and jalapeno, and chop cilantro. Add to bowl.
  • Open cans of corn and black eyed peas. Rinse well, add to bowl.
  • Add chili powder, cumin, garlic power, and red wine vinegar. Toss to thoroughly combine.
  • Can be enjoyed right away, but over time the flavors meld together beautifully!

Notes

-Use as many jalapenos as you're comfortable. I typically remove the seeds and ribs from all but one jalapeno.
-Black beans make a great substitution if you don't have black eyed peas!
