Grilled Chicken Burgers with Sun-Dried Tomatoes, Mozzarella, and Pesto Mayo

- 16 oz ground chicken
- 1/2 cup yellow onion chopped
- 2 Tbsp parsley minced
- 2 cloves garlic minced
- 1/2 tsp dried oreagno
- 1/2 tsp dried basil
- 1/3 cup sun-dried tomatoes, chopped
- Salt and pepper to taste
- 4 oz fresh mozzarella cheese, sliced
- 1/4 cup mayo
- 2 Tbsp pesto
- 4 whole wheat hamburger buns, optional
Add all ingredients to medium bowl. Use hands to thoroughly mix together.
Heat grill to high. Grease grill grates with oil.
Grill chicken burgers, flipping once, for a total time of about 12 minutes (or until burgers reach 175 degrees). Add fresh mozzarella cheese to each burger for the last 3-4 minutes of grilling.
Meanwhile, mix mayo and pesto in a small bowl. Place sliced hamburger buns on grill, until charred.
Spread pesto mayo on each bun, top with chicken burger.
