Grilled Chicken Burgers with Sun-Dried Tomatoes, Mozzarella, and Pesto Mayo

These chicken burgers are packed with juicy sun-dried tomatoes, creamy mozzarella, and peppery pesto mayonnaise.

Ingredients

  • 16 oz ground chicken
  • 1/2 cup yellow onion chopped
  • 2 Tbsp parsley minced
  • 2 cloves garlic minced
  • 1/2 tsp dried oreagno
  • 1/2 tsp dried basil
  • 1/3 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • 4 oz fresh mozzarella cheese, sliced
  • 1/4 cup mayo
  • 2 Tbsp pesto
  • 4 whole wheat hamburger buns, optional

Instructions

  • Add all ingredients to medium bowl. Use hands to thoroughly mix together.
  • Heat grill to high. Grease grill grates with oil.
  • Grill chicken burgers, flipping once, for a total time of about 12 minutes (or until burgers reach 175 degrees). Add fresh mozzarella cheese to each burger for the last 3-4 minutes of grilling.
  • Meanwhile, mix mayo and pesto in a small bowl. Place sliced hamburger buns on grill, until charred.
  • Spread pesto mayo on each bun, top with chicken burger.
