This Blueberry BAEsil Collins is a fresh update on the classic cocktail! Blueberry syrup and lemon juice is muddled with fresh basil and shaken with gin in this refreshing drink.

Ingredients

For the cocktail:

  • 4 basil leaves plus 1 small leaf for garnish
  • ¾ oz. Blueberry simple syrup recipe below
  • ¾ oz lemon juice
  • 1 ½ oz gin

For the Blueberry Simple Syrup:

  • 1 cup water
  • ¾ cup sugar
  • 1 cup blueberries washed

Instructions

For the cocktail:

  • In a cocktail shaker, add basil and lightly muddle. Add blueberry simple syrup and lemon juice, continuing to lightly muddle.
  • Add gin, and fill cocktail mixer with ice. Shake thoroughly to combine, until cocktail shaker is too cold to handle.
  • Pour into a Collins glass, garnishing with mint.

For the Blueberry Simple Syrup:

  • In a medium saucepan combine water and sugar. Set over medium heat, lightly swirling as mixture starts to simmer. Once the sugar is dissolved, promptly remove from heat.
  • Add prepared blueberries, cover saucepan, and allow blueberries to steep for at least 20 minutes. For a deeper blueberry flavor, lightly mash some blueberries with the back of a spoon and transfer mixture (with blueberries still steeping) to the refrigerator for 2 hours.
  • Remove blueberries, and store simple syrup in refrigerator until ready to use. Syrup will keep in refrigerator for up to 1 week.
