Ingredients

  • 1 lb fresh cranberries
  • 1/4 cup olive oil, divided
  • 2 Tbsp pure maple syrup
  • 2 sprigs fresh rosemary, additional chopped for garnish
  • 3 sprigs fresh thyme additional chopped for garnish
  • 1 tsp salt
  • 1/2 tsp freshly cracked pepper
  • 1 baguette
  • 6 oz goat cheese, room temperature

Instructions

  • Preheat oven to 400 degrees.
  • On a parchment lined baking sheet, add cranberries. Drizzle with 2 tablespoons of olive oil, maple syrup, sprinkle with salt and pepper, and nestle rosemary and thyme sprigs in to cranberries. Roast, stirring halfway through, for a total of 20 minutes. Cranberries will burst and reduce down. Add additional time if they need it!
  • Meanwhile, slice baguette in to 1/4 inch slices. Brish with olive oil and sprinkle with salt and pepper. Broil until toasted, about 2 minutes per side.
  • Once baguette has slightly cooled, spread each slice with goat cheese and top with roasted cranberries. Sprinkle with chopped rosemary and thyme to garnish.
