These Honey Glazed Carrots with Feta and Mint pack major flavor. Cooked carrots are tossed in a sauce made with honey and vinegar and topped with feta cheese and fresh mint.

Ingredients

  • 1 lb carrots, rinsed, peeled, and cut on the bias into 1 inch pieces
  • 2 Tbsp honey
  • 2 Tbsp white vinegar
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped or torn fresh mint
  • 1/4 tsp salt
  • Fresh cracked pepper

Instructions

  • Add water to a medium saucepan. Set over medium-high heat until lightly boiling.
  • Add carrots to water and allow to boil until fork-tender, about 10 minutes.
  • In a large bowl whisk honey, vinegar, a pinch of salt, and a couple grinds of freshly cracked pepper. Add carrots, toss to combine.
  • Plate carrots and top with feta and fresh mint. Sprinkle with salt and pepper and serve.
