Carrots are one of those vegetables that I have on hand at all times. Whether it’s carrot sticks, whole carrots, or baby carrots, I’m always nibbling on or cooking them up in some way. Just call me a bunny.

How To Make Honey Glazed Carrots

The beauty of recipes like this truly lies in the method. Once you nail down how YOU best like your vegetables to be cooked, and which flavors you like them paired with, it really becomes more of a (fun!) equation than a recipe. 

  1. Choose your cooking method. I’ve made this exact same recipe by roasting the carrots as opposed to boiling the. Deending on what veg you’re cooking, choose you’re favorite cooking method.   2. Choose a balanced sauce. By “balanced” I mean inclusive of both acid and fat.  Don’t forget the salt and pepper, either.
  3. Add in some flavor. Fresh herbs will always be a given in my kitchen, and I suggest you take note! Herbs add a layer of brightness that can’t easily be replicated. I also like adding another layer of flavor and texture by way of cheese (feta, here), or nuts for some crunch.

Honey Glazed Carrots with Feta and Mint

Ingredients

  • 1 lb carrots, rinsed, peeled, and cut on the bias into 1 inch pieces
  • 2 Tbsp honey
  • 2 Tbsp white vinegar
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped or torn fresh mint
  • 1/4 tsp salt
  • Fresh cracked pepper

Instructions

  • Add water to a medium saucepan. Set over medium-high heat until lightly boiling.
  • Add carrots to water and allow to boil until fork-tender, about 10 minutes.
  • In a large bowl whisk honey, vinegar, a pinch of salt, and a couple grinds of freshly cracked pepper. Add carrots, toss to combine.
  • Plate carrots and top with feta and fresh mint. Sprinkle with salt and pepper and serve.
