Servings: 4 servings
- 1 bag Sweet potato tortilla chips
- 1/2 cup Tomato chopped
- 1/2 cup Green pepper chopped into bite-sized pieces
- 1/4 cup Cucumber chopped into bite-sized pieces
- 3 Tbsp Sliced Kalamata olives
- 2 Tbsp Red onion chopped
- 1/4 cup Feta cheese
- 2 Tbsp fresh dill and mint, chopped
- Tzatziki sauce, recipe below
- Hummus, recipe linked below but store bought is just fine!
- Fresh dill
- Fresh mint
For the tzatziki sauce:
- 1 cup Greek yogurt
- 1/2 English cucumber
- 1/4 cup fresh dill
- 2 cloves garlic, grated
- 1 Tbsp fresh lemon juice
- 1/2 tsp salt
For the tzatziki:
Using a box grater, grate the cucumber. Place in a fine mesh strainer and add about 1/4 teaspoon of salt over the cucumber. Set over the sink or a bowl to release some of its liquid.
After a few minutes, place in a piece of cheesecloth (or a paper towel!) to really ring out as much liquid as you can. Mix the remaining ingredients in a small bowl. Add cucumber once all liquid has been squeezed out, stirring to combine.
To make the nachos:
Arrange tortilla chips on a plate or platter.
Top with chopped tomato, green pepper, cucumber, olives, onion, and feta.
Add a dollop of both tzatziki sauce and hummus to the center of the nachos. Sprinkle with chopped dill and mint!
