Tomas Collins (Dill Pickle Tom Collins)
This Tomas Collins was originally a cocktail served at Minneapolis' Marvel Bar. It features dill aquavit, pickle brine, and lime juice. A must try!

- 2 oz Dill Aquavit
- 3/4 oz fresh lime juice
- 1 tsp simple syrup
- 2 tsp pickle brine (from a jar of top-quality pickles)
- Soda Water
- Fresh Dill
In an ice-filled cocktail shaker, combine Aquavit, lime juice, simple syrup, and pickle brine.
Shake until completely combined, at least 15 seconds.
Strain into an ice-filled Collins glass, and top with soda water. Garnish with dill.
