This Tomas Collins was originally a cocktail served at Minneapolis’ Marvel Bar. It features dill aquavit, pickle brine, and lime juice. A must try!

The Tomas Collins Cocktail

Once upon a time in Minneapolis, there was a wonderful speakeasy bar called the Marvel Bar. It sat below the nationally acclaimed restaurant, The Bachelor Farmer. The brain child of the Dayton Brothers, it was frequented by not only locals but by noteworthy names as well (the Obamas have dined there before). 

While the restaurant boasts a Nordic flair, Marvel Bar featured a beautifully curated cocktail menu, a dark and classy atmosphere, cans of Hamm’s beer, and the only thing to eat that was offered was Cheetos. I’m not kidding. It was a quirky and cool combination of factors that worked so incredibly well. 

While sadly both establishments have since closed, there was one cocktail that to this day, my friends and I still talk about: the Tomas Collins.

It was fresh.

It was salty.

It was bubbly.

And it was so damn drinkable that none of us minded paying $15 for the next one. In my Internet deep dive research since the doors closed, I found a couple resources that feature the exact same recipe. Bon Appétit along with  one of the cofounders of Vikre distillery via Food 52. So here it is! I can’t wait to drink these all summer long.

What Is Aquavit?

With roots in Scandinavia, Aquavit is a distilled spirit made from grain or potatoes. It’s also seasoned with a variety of herbs, giving it a unique flavor. This recipe specifically calls for dill-flavored Aquavit.

If you’re local to the Twin Cities, 45th Parallel is a distillery in Wisconsin that carries Gamle Ode , which specifically is a Dill Aquavit. If memory serves me right, this may be the actual Aquavit that was used in the original cocktail at Marvel Bar!

How To Make A Tomas Collins

  1. In an ice-filled cocktail shaker, combine Aquavit, lime juice, simple syrup, and pickle brine.
  2. Shake until completely combined, at least 15 seconds.
  3. Strain into an ice-filled Collins glass, and top with soda water. Garnish with dill.

A Note About Pickle Brine

Although this cocktail recipe only calls for 1 teaspoon of pickle brine, I urge you to seek out a more refined pickle for this recipe. Now, I love a baby dill soaked in neon liquid just as much as anyone else. However, if you want this cocktail to be clean and refreshing, I recommend seeking out a pickle that features a pickle brine that is more clear than it is colorful.

  • 2 oz Dill Aquavit
  • 3/4 oz fresh lime juice
  • 1 tsp simple syrup
  • 2 tsp pickle brine (from a jar of top-quality pickles)
  • Soda Water
  • Fresh Dill

  • In an ice-filled cocktail shaker, combine Aquavit, lime juice, simple syrup, and pickle brine.
  • Shake until completely combined, at least 15 seconds.
  • Strain into an ice-filled Collins glass, and top with soda water. Garnish with dill.
