Lavender French 75
This Lavender French 75 is the perfect cocktail for Spring! It’s light and refreshing, and so effervescent. The lavender simple syrup is super easy to make, meaning a fancy drink is always within reach. This would be a lovely addition to your Easter table!

For the lavender simple syrup:
- 1 cup sugar
- 1 cup water
- 3 Tbsp culinary grade lavender flowers
To make:
- 1 oz gin
- 1/2 oz freshly squeezed lemon juice
- 1/2 oz lavender simple syrup recipe below
- Champagne or Prosecco, to top
For the lavender simple syrup:
In a medium saucepan, add sugar and water, heating oven medium heat. Swirl the pan sporadically until the sugar dissolves. Remove from heat.
Add dried lavender flowers, allowing to steep for at least 20 minutes.
Strain flowers, and pour simple syrup in to a glass jar. Store in the refrigerator for up to one week.
To make:
In an ice-filled cocktail shaker, add gin, lemon juice, and lavender simple syrup. Shake vigorously to combine for at least 10 seconds.
Pour in to a coup glass or champagne flute, and top with champagne or prosecco. Garnish with lavender sprig.
