Lavender French 75

This Lavender French 75 is the perfect cocktail for Spring! It’s light and refreshing, and so effervescent. The lavender simple syrup is super easy to make, meaning a fancy drink is always within reach. This would be a lovely addition to your Easter table!

Ingredients

For the lavender simple syrup:

  • 1 cup sugar
  • 1 cup water
  • 3 Tbsp culinary grade lavender flowers

To make:

  • 1 oz gin
  • 1/2 oz freshly squeezed lemon juice
  • 1/2 oz lavender simple syrup recipe below
  • Champagne or Prosecco, to top

Instructions

For the lavender simple syrup:

  • In a medium saucepan, add sugar and water, heating oven medium heat. Swirl the pan sporadically until the sugar dissolves. Remove from heat.
  • Add dried lavender flowers, allowing to steep for at least 20 minutes.
  • Strain flowers, and pour simple syrup in to a glass jar. Store in the refrigerator for up to one week.

To make:

  • In an ice-filled cocktail shaker, add gin, lemon juice, and lavender simple syrup. Shake vigorously to combine for at least 10 seconds.
  • Pour in to a coup glass or champagne flute, and top with champagne or prosecco. Garnish with lavender sprig.
