Lightened Up Tater Tot Hotdish

A Minnesota classic! Tater Tot Hotdish gets lightened up, including a homemade cream soup base, sautéed vegetables, ground beef, and yes - tater tots! Surprisingly simple, this recipe comes together easily making it a great weeknight meal.

Ingredients

  • 1 lb Ground beef
  • 2 ribs celery, chopped
  • 1 yellow onion chopped
  • 3/4 cup carrots, chopped
  • 1/2 cup frozen corn
  • 1/2 cup baby Bella mushrooms, chopped

For the creamed soup:

  • 2 1/2 cups chicken broth
  • 1 1/2 cups 2% milk
  • 3/4 cup flour
  • 1 tsp salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1 cup freshly grated sharp cheddar cheese
  • 1 1/2 lbs frozen tater tots

Instructions

  • Heat a large cast iron skillet over medium heat. Add the beef to the pan, using a wooden spoon to break up in to small pieces. Cook until meat is just cooked through. Transfer to a bowl, return pan to stovetop.
  • Add celery, onion, and carrot to pan. The grease from the beef should be plenty to get the veggies sweating. Sauté for 8-10 minutes, until softened.
  • Meanwhile, prep the creamed soup: add broth and 1/2 cup of the milk to a saucepan set over low heat. In a separate bowl, mix flour, remaining milk, and spices. Mix thoroughly removing lumps. Add flour mixture to broth on stovetop, whisking to combine. Allow to heat through, watching closely. Remove from heat.
  • Preheat oven to 400 degrees.
  • Add frozen corn and chopped mushrooms to vegetables. allow corn to heat through, and mushrooms to soften.
  • Add about half of the creamed soup to the vegetables, stirring to combine. Season with salt and pepper. Transfer vegetables to a 9x11 baking dish. Top with ground beef, remaining creamed soup, cheddar cheese. Top with tater tots!
  • Bake for 40 - 45 minutes, until tater tots are golden brown and hot dish is cooked through.
  • Allow to cool slightly before serving. Garish with parsley for color, and serve with ketchup. YES KETCHUP.
