Coconut Water Limeade

This bright beverage is the definition of thirst quenching. Coconut water makes it extra hydrating, with that little kick of coconut. Sweet, tart, and refreshing!

Ingredients

  • 1/2 cup water
  • 1/2 cup honey
  • 4 limes, quartered
  • 1/2-3/4 cup freshly squeezed lime juice
  • 4 cups coconut water

Instructions

  • Add water and honey to a medium saucepan set over medium-low heat.
  • Heat through until honey dissolves. Remove from heat, and add limes. Allow limes to steep until mixture cools through. Transfer to another dish to quicken this process.
  • In a large pitcher, add cooled honey lime syrup, fresh squeezed lime juice, and coconut water. Stir to combine.
  • Pop in the fridge to really bring the temp down. When ready to serve, pour over ice. Gin optional, though highly recommended.

Notes

  • While I think the honey gives the simple syrup a nice floral flavor, feel free to substitute sugar.
  • Add in lime juice to taste. If you prefer things extra tart, you may lean on the end of the 3/4 cup of lime juice.
  • This is best served ice cold. Be sure to cool it in the fridge, and then serve over ice.
