Caprese Hummus
Traditional Caprese flavors make this Caprese Hummus a crowd-pleaser! Sundried tomatoes, pesto, and fresh mozzerella adorn this delcious dip!

For the hummus:
- 1 Recipe Homemade Hummus
- 1/4 cup Sundried Tomatoes drained of oil
For the pesto:
- 3 cups Basil
- 1/2 cup Parmesan cheese
- 1/4 cup Pine nuts
- 1/4-1/3 cup olive oil
- 2 cloves garlic minced
- 1/4 tsp salt
To serve:
- 2 oz fresh mozzarella cheese, sliced
- Prepare My Favorite Hummus.
- Blend in sun dried tomatoes.
- Prepare pesto: blend basil, pine nuts, garlic, and parmesan until loosely combined. With food processor still running, slowly drizzle in olive oil. Season with salt to taste.
- Spread hummus over a plate, or in a bowl. Top hummus with 1/4 - 1/2 cup pesto, followed by fresh mozzarella.
- Broil for 5 minutes, watching closely. Remove from oven when cheese is bubbly and golden.
- Serve with toasted baguette.
Notes:
-The pesto recipe produces more than is needed for this dip. Keep leftovers in a jar in refrigerator. Add to sandwiches, bruschetta, soups, and pastas.
