Caprese Hummus

Traditional Caprese flavors make this Caprese Hummus a crowd-pleaser! Sundried tomatoes, pesto, and fresh mozzerella adorn this delcious dip!

Ingredients

For the hummus:

  • 1 Recipe Homemade Hummus
  • 1/4 cup Sundried Tomatoes drained of oil

For the pesto:

  • 3 cups Basil
  • 1/2 cup Parmesan cheese
  • 1/4 cup Pine nuts
  • 1/4-1/3 cup olive oil
  • 2 cloves garlic minced
  • 1/4 tsp salt

To serve:

  • 2 oz fresh mozzarella cheese, sliced

Notes

  1. Prepare My Favorite Hummus.
  2. Blend in sun dried tomatoes.
  3. Prepare pesto: blend basil, pine nuts, garlic, and parmesan until loosely combined. With food processor still running, slowly drizzle in olive oil. Season with salt to taste.
  4. Spread hummus over a plate, or in a bowl. Top hummus with 1/4 - 1/2 cup pesto, followed by fresh mozzarella.
  5. Broil for 5 minutes, watching closely. Remove from oven when cheese is bubbly and golden.
  6. Serve with toasted baguette.
Notes:
-The pesto recipe produces more than is needed for this dip. Keep leftovers in a jar in refrigerator. Add to sandwiches, bruschetta, soups, and pastas.
