Prosciutto & Salami Baguette with Cherry Pepper Goat Cheese Spread

- 1 small baguette, about 6 inches
- 1 oz thinly sliced prosciutto
- 2 thin slices salami
- 1/2 cup arugula
- 2 Tbsp cherry pepper goat cheese spread, recipe below
For the cherry pepper goat cheese spread:
- 1/2 cup pickled cherry peppers, stems and seeds removed
- 3 oz goat cheese
For the cherry pepper goat cheese spread:
Slice your baguette in half. Bake for about 6 minutes in a 325 degree oven, or until lightly crisped.
Spread 2 tablespoons on the cherry pepper goat cheese spread on both sides of the baguette.
Slice the two pieces of salami in half, lay on bread. Top with prosciutto and arugula. Salt and pepper to taste.
Slice in half or simply pass back and forth between bites :-)
