For the Mixed Berry Swirl:
- 1 1/2 cups mixed berries, such as raspberries, strawberries, blackberries, and blueberries
- 1 lemon, juiced
- 1/4-1/2 cup sugar, or sweetener of your choice
- Pinch salt
For the Amaretto Ice Cream:
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/4 cup amaretto
- 1 cup heavy whipping cream
For the Mixed Berry Swirl:
In a medium saucepan set over medium heat add all ingredients, stirring to combine.
Continue stirring, gently pressing berries as they begin to get juicy and liquid is releasing. Continue doing this until mixture is reduced by at least half: you'll really want this mixture thick.
Once mixture is reduced, strain to remove seeds from the berries. Cool this mixture completely until ready to assemble ice cream.
For the Amaretto Ice Cream:
In a large bowl, combine cream cheese, sugar, and amaretto, mixing with a handheld mixer to combine.
In another large bowl, whip heavy cream until stiff peaks form. Fold in to cream cheese mixture.
Spread a layer of the ice cream mixture about 1/2 inch thick on the bottom of a loaf pan. Drizzle the mixed berry swirl over this layer, followed by another layer of ice cream. Continue layering until both mixtures are gone.
Cover loaf pan with foil and allow to freeze at least 6 hours.
