Ingredients

For the Mixed Berry Swirl:

  • 1 1/2 cups mixed berries, such as raspberries, strawberries, blackberries, and blueberries
  • 1 lemon, juiced
  • 1/4-1/2 cup sugar, or sweetener of your choice
  • Pinch salt

For the Amaretto Ice Cream:

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup amaretto
  • 1 cup heavy whipping cream

Instructions

For the Mixed Berry Swirl:

  • In a medium saucepan set over medium heat add all ingredients, stirring to combine.
  • Continue stirring, gently pressing berries as they begin to get juicy and liquid is releasing. Continue doing this until mixture is reduced by at least half: you'll really want this mixture thick.
  • Once mixture is reduced, strain to remove seeds from the berries. Cool this mixture completely until ready to assemble ice cream.

For the Amaretto Ice Cream:

  • In a large bowl, combine cream cheese, sugar, and amaretto, mixing with a handheld mixer to combine.
  • In another large bowl, whip heavy cream until stiff peaks form. Fold in to cream cheese mixture.
  • Spread a layer of the ice cream mixture about 1/2 inch thick on the bottom of a loaf pan. Drizzle the mixed berry swirl over this layer, followed by another layer of ice cream. Continue layering until both mixtures are gone.
  • Cover loaf pan with foil and allow to freeze at least 6 hours.
