In a medium bowl combine flours, wheat germ, cinnamon, baking powder and soda, and salt.
In a separate bowl, use a hand mixer to thoroughly combine butter, brown sugar, and honey. Add egg, mixing to combine.
Add dry ingredients to wet ingredients, mixing until just combined. Dough will be slightly sticky.
Divide dough in to four. On a sheet of parchment that has been coated with flour, add 1/4 of the dough. Sprinkle with more flour to prevent sticking. Place another piece of parchment paper on dough, and roll out using a rolling pin to about 1/4-1/8 inch thick. Repeat with other dough balls. Stack on a baking sheet and freeze for 20 minutes.
Preheat oven to 350 degrees. Remove dough, and using a fluted pastry wheel (or pizza cutter!) cut dough in to desired shape. I like cutting them to resemble store bought graham crackers, which are broken in two. You can also use your favorite cokie cutter as well.
Transfer to a parchment lined baking sheet, and cook for a total of 9 minutes, rotating half way through to ensure even baking.
Transfer to a wire cooling rack and allow to cool compeltely before serving, which allows them to crisp up a little more.
