Ingredients

For the crust:

  • 1 cup crushed saltine crackers (26 crackers)
  • 1/4 cup butter, melted

For the quiche:

  • 6 slices cooked bacon, chopped
  • 1 yellow onion, chopped and sauteed
  • 2 eggs, lightly whisked
  • 3/4 cup sour cream
  • 8 oz block Swiss cheese, grated
  • 1/2 cup shredded cheddar cheese

Instructions

For the crust:

  • Add crackers to a zip-top plastic bag. Use a rolling pin to crush crackers. Add to 9-inch pie plate.
  • Drizzle melted butter and toss to combine. Use the bottom of a glass or measuring cup to press the mixture into the pie plate and up the sides, forming a crust. Set aside.

For the quiche:

  • Preheat oven to 375 degrees.
  • In a large bowl combine the remaining ingredients. Mix completely to combine.
  • Pour mixture into the pie plate, and bake for 25 minutes.
  • Allow to sit for 10 minutes before cutting and serving. Garnish with chives.
