Bacon and Swiss Quiche

For the crust:
- 1 cup crushed saltine crackers (26 crackers)
- 1/4 cup butter, melted
For the quiche:
- 6 slices cooked bacon, chopped
- 1 yellow onion, chopped and sauteed
- 2 eggs, lightly whisked
- 3/4 cup sour cream
- 8 oz block Swiss cheese, grated
- 1/2 cup shredded cheddar cheese
For the crust:
Add crackers to a zip-top plastic bag. Use a rolling pin to crush crackers. Add to 9-inch pie plate.
Drizzle melted butter and toss to combine. Use the bottom of a glass or measuring cup to press the mixture into the pie plate and up the sides, forming a crust. Set aside.
For the quiche:
Preheat oven to 375 degrees.
In a large bowl combine the remaining ingredients. Mix completely to combine.
Pour mixture into the pie plate, and bake for 25 minutes.
Allow to sit for 10 minutes before cutting and serving. Garnish with chives.
