- 4 spinach tortillas
- 2 cups shredded cheddar cheese (slices may be used instead, if preferred)
- seasoned Greek yogurt dip (recipe below)
For the Seasoned Greek Yogurt Dip
- 2 cups Greek yogurt
- 1 tsp Garlic Powder
- 1 tsp paprika
- 1/2 - 3/4 tsp salt
- 1/2 tsp fresh lemon juice (from about ΒΌ of a lemon)
- 1/4 tsp cracked black pepper
Preheat oven to 350 degrees.
Place spinach tortilla on baking sheet. Top with cheddar, placing an additional spinach tortilla on top.
Bake for about 5 minutes, until cheese is melted through, remove from oven.
Allow to cool slightly. Using a shamrock cookie cutter, cut out shapes and set aside. Serve with seasoned greek yogurt dip.
