Ingredients

  • 1 cup pastry flour
  • 1/3 cup unsweetened cocoa powder
  • 2 tsp cardamom
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs

  • 1/4 cup pure maple syrup
  • cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup dried cherries
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Combine flour through salt in a medium bowl, whisking to combine. Set aside.
  • Combine eggs through vanilla extract, also whisking until combined.
  • Add the dry mixture to the wet mixture, folding gently to combine the ingredients. Be careful not to overmix - this will result in a tough muffin!
  • Gently fold in the chocolate chips and dried cherries.
  • Fill a muffin tin with liners, and scoop the batter into each. Bake for 12 minutes, or until a toothpick inserted into a muffin comes out clean.
  • Transfer to a cooling rack, but note these these are best enjoyed warm!
