Cider Braised Pork Roast with Apples

- 3 lb pork shoulder roast
- 2 tsp salt
- 1 tsp freshly cracked pepper
- 1 Tbsp olive oil
- 1 medium onion, peeled and sliced
- 4 cloves garlic, minced
- 2 cups apple cider
- 2 cups chicken stock
- 2 Honeycrisp apples, thinly sliced
- 1 sprig fresh rosemary
- 4 sprigs fresh thyme
Season the pork roast with salt and pepper.
In a large Dutch oven set over medium heat, sear the seasoned pork roast on all sides. Remove roast from pan, and set aside.
Add sliced onion and minced garlic to the pan, sautéing until fragrant. Turn the heat off and return the roast to the pan.
Pour 2 cups each of apple cider and chicken stock to the pan. Slice the apples and tuck slices around the pork roast. Add rosemary and 3 sprigs of thyme.
Cover the pan and transfer to a 325° oven for 2 1/2 hours, or until the roast is falling apart.
Serve the roast garnished with fresh thyme and served with the apples and onions.
