Ingredients

  • 3 lbs bone-in, skin on chicken
  • 2-3 cups pickle brine
  • 2 Tbsp olive oil
  • 1 Tbsp salt
  • 1 1/2 Tbsp dried dill
  • 2 tsp garlic powder
  • 1-2 tsp freshly cracked black pepper

Instructions

  • Place chicken in a large bowl and cover with pickle brine. Cover the bowl with plastic wrap and refrigerate at least 1 hour.
  • Remove chicken from the brine and place on paper towel-lined baking sheet. Blot each piece with paper towels, removing as much moisture as possible.
  • Combine spices in a small bowl. Drizzle olive oil over chicken, massaging in to ensure each piece is lightly coated.
  • Sprinkle spices over each piece of chicken, again using your fingers to ensure each piece is coated.
  • Preheat the grill to 375 degrees.
  • Place chicken on the grates and cook, turning every so often, until chicken registers at 165 degrees and is lightly charred on the exterior.
  • Remove from grill and allow to sit for at least 10 minutes before serving.
