- 2 cups cooked farro
- 1 cup fresh cherries, destemmed, pitted, and chopped
- 1/2 cup goat cheese, crumbled
- 1/4 cup chopped parsley
- 1/4 cup fresh mint, chopped
- 1/2 cup pine nuts
For the vinaigrette:
- 2 Tbsp red wine vinegar
- 1 tsp dijon mustard
- 1/4 cup olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
Combine all ingredients for the salad in a large bowl.
Combine vinaigrette ingredients in a small jar, shaking to combine.
Drizzle dressing over salad, and toss completely to combine. Garnish with additional fresh herbs and serve.
