Ingredients

  • 2 cups cooked farro
  • 1 cup fresh cherries, destemmed, pitted, and chopped
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup chopped parsley
  • 1/4 cup fresh mint, chopped
  • 1/2 cup pine nuts

For the vinaigrette:

  • 2 Tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • Combine all ingredients for the salad in a large bowl.
  • Combine vinaigrette ingredients in a small jar, shaking to combine.
  • Drizzle dressing over salad, and toss completely to combine. Garnish with additional fresh herbs and serve.
