Grilled Peach, Charred Corn & Burrata Salad with Hot Honey

Sweet grilled peaches, smoky charred corn, creamy burrata, crunchy pistachios, fresh basil, and a drizzle of hot honey come together in this easy summer salad. Finished with flaky sea salt, it's the perfect combination of sweet, savory, creamy, crunchy, and spicy.

Ingredients

  • 2-3 ripe but firm peaches cut into wedges
  • 4-5 ears fresh corn husks removed
  • 8 oz burrata preferably at room temperature
  • 1/3 cup pistachios roughly chopped
  • 1/4 cup fresh basil leaves torn
  • 2–3 tablespoons hot honey plus more to taste
  • 1 tablespoon extra-virgin olive oil plus more for grilling
  • Flaky sea salt to taste
  • Freshly ground black pepper to taste

Instructions

  • Heat a grill or grill pan over medium-high heat.
  • Lightly brush the peach wedges with olive oil. Place cut-side down on the hot grill and cook for 2–3 minutes per side, or until lightly softened with visible grill marks. Remove and set aside.
  • Place the corn directly on the grill and cook, turning occasionally, until the kernels are lightly charred all over, about 8–10 minutes. Remove from the grill and let cool slightly. Cut the kernels from the cob.
  • Arrange the burrata on a large serving platter and gently tear it open. Arrange the grilled peaches and charred corn around the burrata.
  • Scatter the pistachios and fresh basil over the salad. Drizzle generously with hot honey and a little extra-virgin olive oil. Finish with flaky sea salt and freshly ground black pepper.
  • Serve while the peaches and corn are still slightly warm or at room temperature.

Notes

  • Choose peaches that are ripe but still firm enough to hold their shape on the grill.
  • For the best flavor, allow the burrata to come to room temperature before serving.
  • Don't skip the flaky sea salt—it helps balance the sweetness of the peaches and hot honey.
  • Pistachios can be substituted with almonds, pecans, walnuts, sunflower seeds, or pumpkin seeds.
  • For a milder salad, use regular honey instead of hot honey.
