Total Time30 minutes mins
Servings: 4 Servings
- 4 Ears of corn
- 1 Tbsp butter
- 2 Tbsp cilantro chopped
- 1/2 tsp smoked paprika
- 1/4 tsp Garlic Powder
- 1/8 tsp ghost chili powder
- 1/4 cup cotija cheese (or feta)
Heat grill to 500 degrees.
Remove the silk from the corn, peeling away a few of the exterior husks. Re-wrap the corn in its husks.
Grill corn indirectly for 20-25 minutes, until corn is bright yellow.
Lightly brush corn with butter. Mix smoked paprika, garlic powder, and chili powder in small bowl. Sprinkle corn with spice mixture.
Top corn with cotija cheese and cilantro.
-Cotija cheese is similar in taste and crumble as feta cheese. Cotija can be found in most grocery stores in the refrigerated section near other Mexican cheeses and tortillas.
-Add spice to your liking. I happened to have ghost chili powder in my pantry, but cayenne or good ole' chili powder will work just fine.
