Italian Turkey Focaccia Sandwiches

These Italian Turkey Focaccia Sandwiches are the perfect picnic meal! Flavor packed and so delicious.

Ingredients

  • 1 loaf focaccia bread, halved horizontally
  • 2 Tbsp pesto (store bought or homemade)
  • 2 Tbsp mayonnaise
  • 1 Tbsp sun-dried tomatoes
  • 1/2 lb sliced deli turkey
  • 6 oz prosciutto
  • 1/2 cup roasted red peppers
  • 8 oz sliced fresh mozzarella cheese
  • 2 Tbsp balsamic glaze
  • 1/3 cup fresh basil leaves
  • 2 cups arugula

Instructions

  • Lay each half of the focaccia bread on a cutting board, cut side up.
  • Combine mayonnaise and sundried tomatoes in a small food processor and pulse until combined. Spread mixture on one half of the focaccia, and the pesto on the other half.
  • Layer on the remaining ingredients.
  • Sandwich the two pieces of focaccia together and slice sandwich into quarters (more or less, depending on the size of your focaccia!). Wrap up if you're taking on a picnic or enjoy right away. Best enjoyed within 1 day of making.

Notes

I used Trader Joe's Roasted Tomato and Parmesan Focaccia, but any local bakery should carry focaccia as well!
