Marsha's Wild Rice Casserole

This Wild Rice Casserole is pure comfort! Wild rice is combined with mushrooms, tomatoes, onion, and cheese resulting in a simple and delicious side or main dish!

Ingredients

  • 1 1/2 cups cooked wild rice
  • 1 28 oz can diced tomatoes, lightly drained
  • 8 oz sliced mushrooms, subsitute fresh if desired
  • 1/3 cup yellow onion, chopped
  • 8 oz cheddar cheese, cubed (see note)
  • 1 14 oz can Black olives, torn
  • 1/2 cup olive oil
  • 2-3 Tbsp tomato sauce,
  • Splash White wine
  • 1 1/2 tsp salt
  • Freshly Cracked Black Pepper

Instructions

  • Preheat oven to 350 degrees.
  • Combine all ingredients in a large oven-proof stock pot or Dutch oven. Cover with lid and bake for 60 minutes.
  • After 60 minutes, check consistency. If dish is too dry, add additional tomato juice, chicken or beef stock, or water, and return to oven for 5-10 minutes.
  • Serve warm!

Notes

Recipe Notes:
  • Feel free to substitute shredded cheese for the cubed cheese, although the latter offers cheesy pockets throughout the dish, which happens to be delicious.
