Marsha's Wild Rice Casserole
This Wild Rice Casserole is pure comfort! Wild rice is combined with mushrooms, tomatoes, onion, and cheese resulting in a simple and delicious side or main dish!

- 1 1/2 cups cooked wild rice
- 1 28 oz can diced tomatoes, lightly drained
- 8 oz sliced mushrooms, subsitute fresh if desired
- 1/3 cup yellow onion, chopped
- 8 oz cheddar cheese, cubed (see note)
- 1 14 oz can Black olives, torn
- 1/2 cup olive oil
- 2-3 Tbsp tomato sauce,
- Splash White wine
- 1 1/2 tsp salt
- Freshly Cracked Black Pepper
Preheat oven to 350 degrees.
Combine all ingredients in a large oven-proof stock pot or Dutch oven. Cover with lid and bake for 60 minutes.
After 60 minutes, check consistency. If dish is too dry, add additional tomato juice, chicken or beef stock, or water, and return to oven for 5-10 minutes.
Serve warm!
Recipe Notes:
- Feel free to substitute shredded cheese for the cubed cheese, although the latter offers cheesy pockets throughout the dish, which happens to be delicious.
