Mini Mason Jar Summer Berry Crisps

For the berry mixture
- 2 cups strawberries , hulled and cut into bite sized pieces
- 2 cups raspberries
- 2 tsp lemon juice
- 1/4 cup pure maple syrup
- 1 tsp cinnamon
For the oatmeal crumble topping
- 1 cup brown sugar
- 1 cup oats
- 1 cup butter, chilled and cut into cubes
- 1 1/2 cups flour
- 1/4 tsp salt
Preheat oven to 350 degrees.
Combine all the ingredients for the berry mixture in a large bowl, tossing to combine.
Transfer mixture to six 8 ounce, wide mouth mason jars.
Combine all ingredients for the oatmeal crumble topping in a food processor, and pulse until crumbly and combined.
Spoon oatmeal mixture on top of jars with berry mixture. Bake for 20 - 25 minutes until berries are bubbling and cooked through, and oatmeal topping is browned.
If traveling with these, allow to cool slightly before securing lids. These may be stored in the refrigerator for up to 3 days - reheat before serving (or they're great at room temperature!).
- Feel free to swap in your favorite seasonal fruit! You'll need 4 cups total of any fruit combination. Rhubarb, apple, cranberry, or pear would all be wonderful additions depending on the season!
- Make this for a crowd by baking in a 8X8 pan. Baking time may need to be increased by 10 minutes.
