- 1 cup natural peanut butter (the drippy kind)
- 1/2 cup honey
- 1 tsp vanilla extract
- 1 cups oats
- 1/2 cup flax meal
- 4 Tbsp Brewer's Yeast (see notes for link to purchase)
- 1 Tbsp chia seeds
- 1/2 tsp cinnamon
- 1/2 cup chocolate chips
Combine peanut butter, honey, and vanilla extract in a large glass bowl. Microwave for about 30 seconds, and stir completely to combine.
Add oats, flax meal, brewer's yeast, chia seeds, cinnamon, and chocolate chips to the bowl. Mix completely until wet ingredients and dry ingredients are combined.
Use a cookie scoop to form uniform balls, rolling to combine. Place on a parchment lined baking sheet and refrigerate until solid.
You can refrigerate these up to 1 week, or freeze them for 2 months. Enjoy!
- Here is the Brewer's Yeast I've used and liked, but other options are here and here!
- Using a cookie scoop makes this recipe SO easy. I use these scoops for energy bites like this, cookies, ice cream and meatballs!
