Peanut Butter Tahini Cookies

- 1/2 cup unsalted buttr, softened
- 1/4 cup peanut butter
- 1/4 cup tahini
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup + 2 Tbsp flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 tsp salt
Cream butter, peanut butter, tahini, and sugar until fully combined. Add in eggs and vanilla.
Sift together the flour, baking soda, baking powder, and salt.
Slowly incorporate the flour mixture in to the peanut butter mixture. Be sure to not over mix.
Place dough in refrigerator for at least 8 hours.
When ready to make cookies, preheat oven to 325 degrees. Line two cookie sheets with parchment paper.
Roll dough in to 1 inch balls, and place 2 inches apart on cookie sheets.
Bake for 12-14 minutes. Cookies will still be very soft. Allow to cool for 5 minutes on cookie sheets, and then move to a cooling rack.
