Plant Family Potato Salad

The ultimate potato salad! Perfectly tender yellow potatoes, hard-boiled eggs, and celery are tossed in a tangy dressing. The perfect side dish for summer!

Ingredients

  • 5 cups cooked yellow potatoes, cubed (peeled or unpeeled)
  • 1 Tbsp apple cider vinegar
  • 2 tsp sugar
  • 1/4 cup green onion, chopped
  • 5-6 hardboiled eggs, 1 reserved for topping, remaining chopped
  • 1/4 cup celery, chopped
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tsp salt
  • Paprika, for garnish

Instructions

  • In a small bowl, whisk apple cider vinegar and sugar together until sugar dissolves. Pour over prepared potatoes, alowing to sit for 30 minutes.
  • Meanwhile, in a large bowl combine mayonnaise, sour cream, and salt. Set aside. Prepare green onion, celery, and hardboiled eggs. Be sure to reserve 1 egg and slice for the top to serve. Add to bowl, followed by prepared potatoes, and toss to combine.
  • Transfer to serving bowl, top with reserved sliced egg, and sprinkle with paprika.
