Plant Family Potato Salad
The ultimate potato salad! Perfectly tender yellow potatoes, hard-boiled eggs, and celery are tossed in a tangy dressing. The perfect side dish for summer!

- 5 cups cooked yellow potatoes, cubed (peeled or unpeeled)
- 1 Tbsp apple cider vinegar
- 2 tsp sugar
- 1/4 cup green onion, chopped
- 5-6 hardboiled eggs, 1 reserved for topping, remaining chopped
- 1/4 cup celery, chopped
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tsp salt
- Paprika, for garnish
In a small bowl, whisk apple cider vinegar and sugar together until sugar dissolves. Pour over prepared potatoes, alowing to sit for 30 minutes.
Meanwhile, in a large bowl combine mayonnaise, sour cream, and salt. Set aside. Prepare green onion, celery, and hardboiled eggs. Be sure to reserve 1 egg and slice for the top to serve. Add to bowl, followed by prepared potatoes, and toss to combine.
Transfer to serving bowl, top with reserved sliced egg, and sprinkle with paprika.
